Change Needed

 This blog has been idle for while, I do apologize.

I have had so many changes since my last entry. Mental health is and will always be an ongoing struggle for me. I put so much stock in how the company I work for, sees me and my work performance, that I have become so very angry, resentful, and defeated. I have spent 18 off and on working for the same company, heck the same store, just to feel like I am incompetent because I am Bi-Polar. I work harder than most of my cashiers, and am twice their age. There is very little that I am unable to do in my store. Most is because I no longer have the options in which to do those jobs, i.e. all my supervisor access. Without the tools to do my job effectively, I spend a lot of time waiting for Management. Sighs. I have been passed over for a promotion I was most qualified for not once but twice.. 1st time was because of my "emotions". Really do you not realize that is against the ADA? 2nd time I still don't understand. Anytime that supervisor is there, I feel like she waits for me to do her job. That isn't the point of being a back up.... Give you a break, lunch and help with the floor WHEN it is busy. Not just so you can stand at the front door, or SCO. Do your own job..( Hence my anger)

My weight is down, way down; however my legs/knees hurt and feet are being crippled by pain. Can't afford to see a Dr. because my hours keep getting cropped weekly. I will lose my insurance in another 11 weeks, if my hours keep up. I am at my wits end, to be able to pay bills, let alone eat, see a Dr. or pay for meds. 

I don't interview well, I self-sabotage, and don't know how to sell my own good qualities or skills. All I ever see are my fears, doubts, inabilities to control my emotions/deal with the aftermath of a triggered response. The best years of my life as an adult is when I made my own business. With Bersal (Birdie) we had our own house cleaning business. 2 years we did that, hard work, but worth it. As a rideshare driver, I did okay. Not as well as my male counterparts, but I also only drove a sedan. I made my own hours, worked as long as I wanted, within legal time constraints, and could work until I made whatever I needed that week. I do miss that, but the roads are so much worse and the stress of driving would not be healthy anymore. 

What does that leave me? Writing, (yes maybe one day), Crafts/painting, um that requires more patience that I have right now. Cooking...  Baking.. Why yes, those are quite appealing to me...


I already cook, smoke, bake, and eat. Right??  This might be the right option for me.. Will do more research on how to do this without ending up in prison. 


I am thinking building store, site, etc. to be able to get my orders out locally.

New Updates 2019....

Good Morning Everyone,

It is 7:30 on Feb 28, 2019. This year has started out terrible. I would like to fast forward to better things...

First off, I have been doing Ride-Share as a FT job since Oct of 2017. As the markets progress, and more drivers are added to the platforms (Uber, Lyft, etc) Making the same amount of money started getting harder and harder. Things in my personal life set things back a bit, a roommate out of work.... I have never complete recovered, when the slow time hit in driving. From the beginning of Nov to the beginning of Jan. (Sema to CES) it slows way down.

My mother passed on Jan 15, 2019. I found like 2 weeks later. I have been estranged from my mother and the rest of my family for years. I am an adopted child, who had some trouble adjusting to a 'normal' life. Mom and I had issues, which made me rethink life. I chose to walk away instead of always being angry at her, and fighting. So I believe it had been 5 years since I last spoke to anyone. However, that being said, she is still my mother and I love her. I have been dealing with guilt over not being there the last year, she was diagnosed with a rare form of Leukemia and chose not to treat with Chemo... The last year of her life, she and my foster sisters, and nieces had tried to reach out to me. I found out through Facebook Messenger via a friends Messenger that mom had died. My niece reached out to friends on my FB, to try to get a hold of me. It was a very rough week. I am still having bouts of depression and guilt. I will probably carry some of that until my final days....

I also ended up losing my car 2 weeks later... It was repossessed for lack of payments. I expected it, just a hard time to lose your income.

I had begun a year ago to treat my medical issues with Cannabis Products. I started out just using CBD for my depression and anxiety. It did such a great job with that, I proceeded to try out THC Vaping for sleep. My health has started to improve, and I don't take any prescription meds now. I have graduated to being an actual Medicinal Pot user. Which now at this point in life has made job hunting very difficult. Even though Medical and Recreational Cannabis use is legal in NV, most employers follow Federal Law in which employees must pass a drug test, for ALL drugs, even Medicinal Cannabis.

I am almost 50 years old. The longest job I held at one time was my previous one at Wal-Mart. It is a stressful job, I liked some associates I worked with, but that wasn't enough to make me keep dealing with changing policies, Managers playing favorites, or just plain unfair work practices. I decided I was done. To start working for myself. So I did.

But now I find myself unable to deal with all the BS and red-tape crap that most companies come with. I want to find a job that I love, that brings me joy. In fact all that I am looking from now on, is things that bring me happiness and joy. All things stressful, unkind, etc I am weeding out of my life.

Which brings me to employment hunting.... I have narrowed down a few things that I think would bring me joy and happiness, as well as an income.

1. Working in a Witchcraft store. (Magickal Shop) I am a witch after all.
2. Working at some capacity in a Cannabis Dispensary Store.
3. Working in a Sex Toy Shop.

All are customer service related, which I have loads of experience in. I have a working knowledge in Pagan/Wiccan Studies. I also use and have been taught the usage of Cannabis strains, what they do, on a personal level. As a former BBW Model, I have a love of sex toys, and lots of experience on what works for me, and am not a shamed to talk about them. Plus what  fun environment all 3 of these would be.

Lastly if I could do anything???   I would own my own store. It would have a Specialty Diner, (low-carb, Paleo, Keto, etc) A book/coffee shop, as well as an area for Magical Items, CBD products, and Sex toys... I would have a special place to also sell any of my friends homemade products.... I would also hire all my close friends to help me run different areas based on their skill sets. THIS, THIS would be my ideal life to live out the rest of my working adult life...

I want to start traveling as well. Cruise, all inclusive resort stay in the Caribbean, just get out of America and see the world.. This has always just been a dream of mine, I don't have the funds to all that, heck I don't even own a passport yet...

Loosing my Mom, made me realize that holding on to all that anger and pain just  held me back from living. I am trying to prioritize the people that are most important to me, so I stop pushing everyone away from me. Letting go of the negativity I have lived with most of my life. I want better, I need to do better, and this year as hard it has started out, is the best time to make those changes.Can't go anywhere but up right?

A New Found Jewel!!!

Since I left Wal-Mart I have used CBD in a variety of forms; Disposable Pens, Cartridges, Can-tabs, Creams, and Capsules. I liked the relief that both the pens/cartridges give, however temporary, great to help with those anxiety attacks that kick up. I absolutely adore Can-tabs and am saddened that they are so hard to find now here in Las Vegas, NV. Which brings me to the Capsules with Hemp Protein which for me didn't work very well at all...

I suffer from Bi-Polar Disorder, Border Line Personality Disorder, and Anxiety issues. With CBD I don't have to take any Pharmaceuticals anymore to treat these diseases. I also have knee pain. From knee surgery from when I was 7 yrs old, and a knee injury. I get chronic knee pain. I utilize CBD cream on my knees, daily after my shower. This last bout with rainstorms, is the first time in 20 years I didn't know ahead of time that it was going to rain!! I was absolutely dumb founded, when the rain started pouring down, and I hadn't had pain in my knees the 3 days before... I adore CBD. It has changed my life. Pain free and helps so much with my depression (as long as I am taking it daily and correctly).

Hindsight

If you have followed or read this blog for any period of time, you know I started Paleo before it was cool, but after many amazing people laid some great foundations. I worked hard for 2 years to be fastidious on what I ate, if it was Paleo or not. I got back on the horse if I had a slip up, or chose to have a cheat day. Which leads to me this post...

I let it all go.

I know, I know. I can hear you all asking, "What were you thinking?"

Best answer? I got lazy, and hmmm Boys?!?!?

Yes, I had a new roommate, which then turned into 2 new male roommates, with whom I decided took precedence over me, and my well-being. I know, I hear you again, "Ridiculous, you are saying!" However, I chose to take the time and energy I put into my meal planing, shopping, and preparing and put it towards being social with the people in my house.

I went awesome for a while... And then like all things, it faded. By then I was out of practice taking care of me. I had 2 new people in the house who didn't understand my eating habits. It was hard trying to explain, exhausting to defend, and just plain simpler to do nothing. So I did just that, nothing.

On April 4th, 2015 I went to the hospital not knowing what was wrong with me. I couldn't breathe, thought I had severe bronchitis, or an upper respiratory infection. Holding my chest because it hurt to breathe, they thought I was having a heart attack. In the triage area, the did my vials and I could see they were all freaked out. My Blood Pressure was 215./98 or something crazy. I could hear people wondering why I wasn't stoking out, or worrying that I would. I wonder if I was that vapid when I was in the Medical Field. Hello, I am right here, I can hear everything you are saying, I am already scared, and you ARE NOT HELPING. So they take me back immediately, to an ER room. No waiting for the really fat woman, who might stroke out at anytime, or have a heart attack right there. Not gonna tell you the whole blow by blow of my visit, by the end of the week; yes they admitted me that night. I was a guest for a week. Pneumonia was the culprit. I had high BP, border line diabetic, and of course I am now at the highest weight of my life.

It is a month later, I can breathe again. I am on BP meds, Diabetic meds, some anti-depressants, that help as appetite suppressants. I am blessed to have great insurance, and a finding a wonderful Dr. (She is actually a PA-C. LOVE HER). I have been having so many changes all in the course of the last month, I truly haven't gotten myself together yet. My lease was up in May, so I am in between living spaces, staying with some friends. However I know that I need to get back to a lifestyle that benefited me not hindered me. Whatever excuses I come up with, they are just that; excuses. I have to find my way back to health. 

In hindsight would I make different choices a year ago, absolutely. I would make that tough call and chose me. It isn't an easy road to being healthy. The media, retail, supermarkets, do not make it cheap  to eat the right way. They advertise yummy looking food that is horrible for us, and the things that are healthy for us, can be expensive. If I hadn't had two years of living proof that I can being healthy, I wouldn't know where to turn right now. Now it is just a matter of getting the courage, and motivation to start making the right choices each and every day.

A long over due realization...

What a crazy year it has been, I can't believe that it has passed so quickly. New roommates, changes with in my job, and mostly the effects of not being Paleo has done to my health and my body.

So my old roommate left like a year to the day. I had a coworker move in a week before, so he has been here just over a year. His best friend was here like all the time, and so they decided he might as well just live here. Ups and downs with that, but I guess all family has those. I can't complain as much as I'd like to, because splitting rent and utilities 3 ways helps tremendously. Just hard when I am a homebody, hermity type person, and they are very social at home.

Changes within my job, well that happens to everyone, changing economics and decreased sales in retail can have that effect. The changes aren't all to my liking, so I have been looking for another job. That in itself is huge if anyone knows me. I don't like living outside my comfort zone much.

Then lastly, my main reason for posting tonight: The changes of my roommates, lack of hours at work, meant I had to change the way I ate. We would pool our money for groceries, for cost efficiency, which meant that I didn't feel right pushing my eating lifestyle on them. Granted one of them grew up in a Gluten free household, but I didn't want to force them to eat like me, I am not their mommas'.

The effects on me, I have a few off and on over the year, but lately things have gotten worse.

  1. Shortness of breath, hard to breathe(SOB)
  2. Swollen feet/legs
  3. Stomach issues/bowel problems
  4. Gas
  5. Restless Sleep Habits(lack of sleep)
  6. Sneezing, profusely after eating anything with Wheat

This is just to name a few.  It sucks because I am having trouble finding clothes I own to actually fit me. My favorite boots, forget it, my legs are so swollen, I can't zip them. Also other physical limitation are happening too. Also I haven't been so sick, or ill since I started being Paleo years ago. Coming back to wheat, sugar, dairy is killing my body. I have tried to see things from other peoples ways of looking at Paleo, it's all in my head, it's a new fad. Unfortunately for me, none of this is true.

At one time back in August, it scared me so much, I went to the emergency room. Chest palpitations, SOB at my age and weight, made me think I was having a heart ache. They found nothing, however I found a huge hospital bill. Lucky me...

I cut out wheat for about 2 weeks, added Fish Oil to my vitamin regimen and felt so much better. I am now looking at 8 weeks later now, and I am even worse that I was back in August. Why? Because I took the easy way, and ate crap. Waffles, pasta, sandwiches, fast food, and TV dinners; because it was inexpensive on my budget and easy to do.

I truly need to get wheat out of my lifestyle, doesn't matter how cheap it is, it is KILLING me. This slow painful death is not my cup of tea. It is a bit hard at the moment to think about exercising, I re-hurt my back at work, which makes even walking a chore at times. I have to consider the future here, I need to get moving again because as I don't do anything to exercise, my back is getting tighter and tighter, the muscles are atrophying and that is a scary thing to me.

The holidays are coming, I do hope that I will feel better soon, and get you all some new recipes up. I have a few that I would like to try that are Gluten Free and I will work to make them Paleo as well.

The Benefits of Coconut Oil or "80 uses for Coconut Oil"

So what’s the deal with coconut oil?
Offering a myriad of health benefits, coconut oil is affordable, readily available and completely natural. I have completely fallen in love with coconut oil and use it for EVERYTHING. Literally. I buy it in 5 gallon increments and keep it all over my house. I even have some in the car. So here is a little information to inspire you to check out this amazing oil including 80 uses for it!
General information about Coconut Oil
Coconut Oil Is:
·       Anti-inflammatory
·       Antimicrobial
·       Antifungal
·       Antiviral
·       Improves nutrient absorption
Daily Dosage:
Here is a chart outlining the recommended daily dosage of virgin coconut oil for persons over the age of 12. Coconut oil may be consumed by children under 12 but it is advisable to check with a healthcare practitioner on the proper dosage. Any good naturopath will have the information at the ready.
(Editor’s note: the amounts below are for “general” health and maintenance. Depending on why one is taking coconut oil, and what they hope to accomplish, the amount can be much greater. For example, many people seeing positive results for neurological diseases like Alzheimer’s are reporting that they are consuming up to 9 tablespoons a day or more to see positive results. For those just starting, amounts much less than these below should be started until the body is used to consuming high amounts of fat. The most common side effect of taking too much coconut oil is diarrhea.)

Type to use:
·       Expeller pressed coconut oil can be used for anything. It does not have a coconutty smell of taste.
·       Virgin coconut oil tastes coconutty and is great for cooking and baking where you want that flavor.
·       Food grade should always be used.
80 Uses for Coconut Oil
Personal Hygiene/Body
1.       Moisturizer – simply scoop some out of the jar and apply all over your body, including neck and face.
2.       Eye cream – apply under the eyes to reduce puffiness, bags, and wrinkles. Use on the lids in the evening.
3.       Preshave – coconut oil will prep skin for the pending damage caused by shaving.
4.       Aftershave – coconut oil will help heal your skin after shaving without clogging pores.
5.       Deodorant – coconut oil alone can be used as a deodorant, but even more effective in combination with cornstarch/arrowroot powder and baking soda!
6.       Hair Conditioner/Deep Treatment – use as a leave in hair conditioner by applying a teaspoon of coconut oil to your ends and then running your fingers through your hair to distribute the rest! For a deeper treatment, rub in a tablespoon of coconut oil onto your dry scalp and gently work through to the ends. Put a shower cap on to prevent transfer onto bed linens and leave on overnight.
7.       Hair Gel/Defrizzer – rub a little between your palms and either scrunch into hair (for curly hair) or finger comb in through from scalp to ends (for wavy/straight hair).
8.       Toothpaste – there are numerous recipes out there but I just mix coconut oil and baking soda and dab a little of the mix on my toothbrush.
9.       Make up remover – use a cotton swab and a dab of coconut oil and you would be amazed at how well it works!
10.   Chapstick – just rub a little into lips and it not only acts as a softening agent but it also has an SPF of about 4 so you get a little protection!

11.   Massage Oil – pretty simple; grab some and rub!
12.   Lubricant – it is an all natural, perfectly safe personal lubricant. Not compatible with latex!
13.   Sunscreen – see my post on natural sunscreen for more detailed information.
14.   Stretch Mark Cream – coconut oil is great at nourishing damaged skin. It may not be the magic stretch mark cure but it will help.
15.   Nipple Cream – works great to nourish cracked, sore, or dry nipples. Apply to a cotton ball and leave on your nipples between feedings.
16.   Diaper salve – very comforting on a rashy bum with no harsh chemicals. Also safe for cloth diapers.
17.   Cradle cap – having issues with dry skin on your baby’s scalp? Coconut oil will not only nourish your baby’s skin, it also helps eliminate cradle cap. Just rub a teaspoon onto scalp daily.
18.   Body scrub – mix coconut oil and sugar together and rub all over! Rinse off and your skin will be super soft! You can add in essential oils if you would like a specific smell.
19.   Healing – when applied on scrapes and cuts, coconut oil forms a thin, chemical layer which protects the wound from outside dust, bacteria and virus. Coconut oil speeds up the healing process of bruises by repairing damaged tissues. Plus, it smells a heck-of-a-lot better than anything from the pharmacy.
20.   Bug Bites – when applied directly to a bug bite, coconut oil can stop the itching and burning sensation as well as hasten the healing process.
21.   Skin problems – coconut oil relieves skin problems such as psoriasis, dermatitis, and eczema.
22.   Swimmers Ear – mix garlic oil and coconut oil and put a few drops in affected ear for about 10 minutes. Do this 2-3 times a day and it usually works within one or two days.
General Health and Wellness
23.   Stress Relief – relieve mental fatigue by applying coconut oil to the head in a circular, massaging motion. The natural aroma of coconuts is extremely soothing thus helping to lower your stress level.
24.   Digestion – the saturated fats in coconut oil have anti-bacterial properties that help control, parasites, and fungi that cause indigestion and other digestion related problems such as irritable bowel syndrome. The fat in coconut oil also aids in the absorption of vitamins, minerals and amino acids, making you healthier all around.
25.   Fitness – coconut oil has been proven to stimulate your metabolism, improve thyroid function, and escalate energy levels, all of which help decrease your unwanted fat, while increasing muscle.

26.   Nose bleeds – coconut oil can prevent nose bleeding that is caused by sensitivity to weather such as extreme hotness and extreme coldness. This condition happens when the nasal passages become dry because of cold or dry air resulting to burns and cracks in the mucus membranes so bleeding happens. To prevent this just put coconut oil in you nostrils. Coat your finger with coconut oil and then lie down and coat your finger inside your nose. Doing this will strengthen and protect the capillaries in the nasal passages. A Vitamin C supplement will also help prevent nose bleeding.
27.   For breastfeeding moms, consuming 3 ½ tablespoons of coconut oil daily will enrich your milk supply.
28.   Helps with weight loss & controlling cravings.
29.   Helps keep blood sugar levels stable and/or helps with cravings in those with diabetes.

71.   Nutritional supplement – melt and add to smoothies.
Other Uses
72.   Insect repellent – mix coconut oil with peppermint oil extract and rub it all over exposed skin. Keeps insects off better than anything with Deet! Tons safer too.
73.   Great for dogs and cats for general wellness. Just add a teaspoon to their water bowl daily.
74.   Goo Gone – just mix equal parts coconut oil and baking soda into a paste. Apply to the “sticky” area and let it set for a minute. Then scrub off with an old toothbrush or the scrubby side of a sponge.
75.   Chewing Gum in Hair Remover – just rub some coconut oil over the stuck chewing gum, leave in for about 30 minutes, then roll the gum between your fingertip. Voila! It’s out!
76.   Polish Furniture – coconut oil with a little bit of lemon juice to polish wood furniture. However, I recommend you test it first on a very small, unobtrusive part of your furniture to make sure it works the way you’d like.
77.   Polishing Bronze – all you have to do is rub a little oil into a cotton towel and then wipe down the statue. It cleans and helps deepen the color of your bronze.

Kit Cat's Banana Bread

This was pretty close to my latest Paleo Banana Bread Recipe.

I altered it a bit from whatever I found on the internet, that I will call it mine. So here goes, I hope you enjoy!!



Kit Cat's Paleo Banana Bread



Ingredients:

  • 5 eggs
  • 3 ripe bananas mashed
  • 1/2 cup coconut oil or Salt free grass-fed butter (melted)
  • 1/2 cup coconut flour
  • 1/4 salt
  • 1 tsp baking soda
  • 1 T Vanilla
  • 1 tsp nutmeg
  • 1/2 chopped nuts optional (if you want nut-free, for allergies omit)

Instructions:

  1.  Preheat oven to 400 degrees. Grease loaf pan, or line muffin tins.
  1.  In a separate bowl, mix dry ingredients; flour, baking soda, salt, and nutmeg. Set aside.
  1.  Combine eggs and bananas, mix with a blender/food processor until smooth.
  1.  Add coconut oil, or butter til blended in.
  1.  Slowly add in dry ingredients, until all blended in. 
  1.  If using nuts, fold in now.

Dough will be thick, you can add a bit of water, coconut milk to thin out if you want, just not too much.
Pour into pan, or fill muffin tins 1/4 cup full. Bake 10 to 15 mins, til a toothpick comes clean from center of muffins. Loaf a bit a longer, til center is set.

Decision Day...

Today's post is going to be a bit personal. A testimonial if you will.

I know I have talked a blue streak about how awesome Paleo is, who I think is amazing, blah, blah, blah...

But guess what, I also live in the same world as you do. I have real world issues and problems. Those of you who have read my blog, or who know me in the real world already know this about me, so it's a refresher. I was diagnosed with Border Line Personality Disorder, Depression, and Bi-Polar Disorder about 5 years ago. It took awhile but I have found a medical combination to treat and balance my Chemical Imbalance, so that I generally function alright. I have triggers and bad days but who doesn't right?

So I started Paleo a little over a year ago. I was off wheat for over a year, I didn't know that my body had changed so much. I knew I had lost weight, my clothes didn't fit. I could run after a bus without having a coronary, that was the coolest thing. I was sleeping better.

I have made comments in other posts about our bodies not having Gas. (Did you know Farting isn't something we HAVE TO DO?) It's a way our bodies tell us that we are eating something we shouldn't be. I think this one fact is so absolutely interesting, because the first thing that happens to me when I start shoving wheat products in my face, is yucky tummy and then GAS...

The fact that after eating wheat and dairy, I can't breathe through my nose, because it becomes itchy, runny, and I sneeze often, is a sign that I shouldn't be eating those things. Not that I am "allergic" but that my body can't process and digest it, nor should it have to try.

Stress sucks. I think it is the number one killer of all humanities resolutions.. Just sayin'

I had been saving for a "Stay-cation" which is happening in 2 weeks. One thing after another has been happening to deter funds from going to the savings nest. However, I haven't had the funds to help me eat correctly either. So basically since my Scooter was stolen, I have fallen into the trap of eating crap. I can't afford anything, so I have eaten all the cheap crap I can get my hands on, which all has wheat in it.

Guess what folks...

I am at the end of my rope...

I feel like Shit. I am done feeling like shit. I haven't had a good night sleep in a while, nor has my stomach felt normal in a long time. It always feels bloated. I have had a headache all day. Nothing has seemed to help. I have spent most of my days the last two weeks slowly devolving into a pit of despair. I hate it. Even though I take my meds, I can still feel that feeling of helplessness, and hopelessness start to take over, then it gets pushed aside by, I don't care/give a F*%K. Not a healthy way to live...

So I decided today, to change it.

Two things I decided.

After my stay-cation, I will be saving up for a mini-deep freezer to store these great meat packs from 'The Butcher Block".

Secondly. I went straight after work to buy "REAL" food. Spent the last of what I had saved for my Stay-Cation, but bought Meat and Eggs. I had frozen Broccoli in the Freezer. I craved some O.J. for some reason, if you know me, I don't like it, but got my Liquid Vitamin C. I am finally for the first time in WEEKS full, on protein and vegetables. BUT ABSOLUTELY NO WHEAT.

I am taking back my life. My body. I am going to do some research I may even stop my medication eventually. But I want all of me to be healthy. I know that means I need to also get off my ass and work out, Shut up. 70% Diet, 30% exercise. Let me get my diet (that which I put in my body) down first. Then we can tackle the other 30%.

Anyways. As I have said in other posts, I have never in all my FAT life found something that I endorse proudly, like I do Paleo. I have been to Weight Watchers, counted calories, points. I have done Nutri-Systems. That food was nasty and expensive. I have done the gym thing. OA meetings. I have found nothing that I was successful with ON MY OWN, other than Paleo. It is easy.

The hardest thing to do, is read your labels. Actual if it has a label, it probably isn't Paleo. ;-)

I would love to have more people learn about this amazing Life Style, and listen to their bodies more. I think so many more people would begin to feel better almost overnight.

Do you know the Difference?

I have been doing some research to help inform some co-workers on what "Paleo" is. It has also been helping me to remember why I started following this lifestyle from the beginning.

I have always know that there were many different schools of thought, mind sets if you will, on how a real Paleolithic Diet was to be followed. I have read Robb Wolf's Book The Paleo Solution: The Original Human Diet and liked much what he had to say. I started research ways I could "afford" this Paleo Diet, on my PT job. I didn't see how Cage-Free, Grass Fed, and Organic was ever or will be in my fridge or freezer.

I finally made the leap though. I tore my kitchen apart and threw away, or donated all the foods that contained Wheat, Grains, Dairy, were processed at all. Slowly I started adding REAL food to my kitchen.

I have come to a new turning point again in my life. Looking at what I am doing, have been doing, and having to chose to continue following this path for my health. With all kinds of things that affected me emotionally this last month to month in a half, I completely and totally fell of my Paleo Wagon. I have felt worse this last month than I have in a very long time. I even started questioning if my meds were working, stopped taking them for a few days. Then started again, just to check the results.

It was my DIET.

The wheat, sugar, and dairy that I have been consuming, because it was easier, was killing me.


So I come to the question do you know what foods affect your body?

I don't have Celiacs Disease, but these things do affect my body, and my Chemistry. (Remember I am Bi-Polar, it affects that too)

You have many choices these day. 21 Day Detox, The Whole 30 Program, The Paleo Diet LifeStyle.  Anyone of these are a great way to start. I know I need to get off the sugar again. So I am looking into the The Whole 30 Program this time.    


I like having books and recipes on hand, so I may still get her the 21 DSD eManual in PDF for only $21. You can't beat that.  Her new book "The 21-Day Sugar Detox: Bust Sugar & Carb Cravings Naturally" will be released in Sept of this year.


One of the of nice things I like about the Whole 30 program is this line right here and I am quoting straight from their website

 So in this day and age where the battle rages on against GMO's and the Government talking about what we should do about our health. Decide what YOU should do about your health. Great things Happening in Paleo

So many exciting things are happening in the Paleo world right now. Elana Amsterdam's new book, Paleo Cooking from Elana's Pantry: Gluten-Free, Grain-Free, Dairy-Free Recipes was released today.


Next month on the 2nd, my long awaited and PRE-ORDERED Book will be released from my favorite "Parents", Beyond Bacon: Paleo Recipes that Respect the Whole Hog.

I know that James Gregory from Fast Paleo is make changes to his site, and has incorporated "PaleoPositivity.com" into FastPaleo.com's website.  I haven't talked much about FastPaleo.com, but it's a rich source of recipes sent in from all over. People's own homemade version of their favorite recipes that are Paleo, or Paleo Friendly. I had the Fast Paleo App on my old Android phone, it was great in a pinch when I was at the store and need to grab stuff for meals.

Two more of my favorite Paleo Bloggers have books coming out in the next few months. Against All Grain: Delectable Paleo Recipes to Eat Well & Feel Great.

As well as The 30 Day Guide to Paleo Cooking: Entire Month of Paleo Meals by Bill Staley and Haley Mason, of the "Gather".

Yeah I Found IT!

I made a new waffle this morning. LOVED IT!!

The main recipe was from http://www.primalpalate.com/  I just altered it a bit for my tastes. I left out the raisins and cinnamon, I was topping them with strawberries and bananas once cooked. I also added a dash of Vanilla. I always add vanilla to almost everything baked. ;-)

These coconut flour waffles were great! Lite and fluffy just like I was hoping for. The dense almond flour that I had made last weekend, just wasn't what I wanted. The density is good in muffins or bread, but for cupcakes and pastry type items, I think I will stick with the coconut flour.

Anyways side of bacon, coffee with coconut oil and breakfast was served. I am a happy girl this morning. Happy Easter, Ostara, Spring to me!!!

Oh Yeah!!!

This morning has been amazing!!

I have been cooking. LOL

So what is different you say? I made Omelet muffins, which means I needed Mayo. UGH!!

If you all have followed me, or know me, ya'll know I had an incident with making Paleo Mayo a year ago. It was truly horrible. It scarred me for life. SMH.

However, I decided today was the day to get back on the pig and do it again. Yes I said PIG... I used Olive Oil the last time, and this time I used BACON OIL. I made Baconaise... IT's the bomb!!!

I did something else different too. I used a hand mixer as well. I utilized the whisk attachment that came with my Black & Decker MX217 PowerPro 250-Watt 6-Speed Handheld Mixer with Storage Case, Black, followed the emulsion directions on how I was to pour in the bacon oil, and with in 20 mins I had Bacon-aise!!




Earlier this week I made my Paleo Banana Muffins, using Elana's Pantry Recipe for Banana Bread. I just use muffin cups and bake for 15 mins, or until my nose says they are done.  Absolutely Fabulous! I love having breakfast to travel with me in the mornings.

After making the amazing Bacon-aise, I used it to make the Omelet Muffins. Here is a photo of that and the Banana Muffins from earlier this week.

Paleo isn't hard to do, just takes planning, and a little bit of time and effort.

A NEW Food Pyramid

People are used to a certain way of eating. Used to the USDA food pyramid, I am about to post a Paleo food pyramid that will completely change the way you think about and consume food.







Looking this food pyramid this thing I saw last year, was EWWW Fish, then OMG there is only FOUR categories. On a second closer look, I saw FATS in the bottom of the chart. FATS?? What the heck?

Yes Healthy Fats, Coconut Oil, Olive oil, Seed and nut oils, Avocados, and lean cuts of meat are encouraged on Paleo. Oh and don't forget one of my favorites, BUTTER and or Ghee. They would prefer grass-fed butter, like Kerrygold Pure Irish Butter, but my budget doesn't allow for that, so as I always say, I do the best quality I can afford, with out feeling bad!!!

Another thing I see is EGGS!! Do you know all the things you can do with eggs? The list is endless. I bake 'em (yes, it's something I learned after starting Paleo), Fry 'em in butter then top them with homemade salsa, or avocado when in season, scramble them with bacon and or sausage. Make egg muffins. Follow my Pinterest for more amazing Paleo recipes.

If you are just starting Paleo, or getting back on board, remember to eat breakfast. IT means to Break your Fast. Being a fat girl most of my life, I thought not eating breakfast would be good for me. Well it isn't folks. Your body needs the fuel to work. What A Difference...

This last year has been an experience. In so many ways. My personal life, my health, and my job. Life would be boring if it didn't change up on you every once in a while I suppose. I always thought I was of the school of thought, "No surprises, no changes!!" I now think that some change is needed, wanted, and should be expected in life.

With that said...


Almost a year ago today, (Lent is early this year, by a week) I began a journey into a wild and unknown world for me. Traveling a rough path, that I had no idea where it would lead me. The journey has been far from easy, people, situations and just plain bad habits made my life difficult. As humans we like what is easy, the path of least resistance right?  I had hoped for an outcome of less meds for my mental health, but what I found has been a different experience.

I was asked today by my co-worker, "Without having read a book, sum up Paleo for me."  My Gosh. I had no great answer for her. I explained the "No's" to her. I tried to explain the cool stuff about the new food pyramid, but I couldn't get much further than that, because of course we were at work. So Paleo in a Nut Shell... I am going to share my favorite Video again for the beginners:





So what has actually happened for me, to me during this last year?

First off, let me tell you, I have sucked at maintaining a full on 100% Paleo routine. I have had my cheat days, and the last month or so, I have been plagued with the Flu, then a hideous cold that took forever to get over, and I wasn't following my lifestyle much, at all.

The way I approached Paleo was I want to make my health better, but I don't have the money to buy high-end. I bought the best I could with what I had. If it was on sale, even better. I love Cardenas, and Winco. Food4Less even has some amazing Produce sales. I stock up as much as possible when I can on my fresh food items. I separate them out, put them in baggies, and freeze things. A great way to have fresh food for later, with no preservatives or additives. I added coconut oil to my coffee every morning (1TSP) to help boost my metabolism. I switched to Turbinado Sugar, only for my coffee. For cooking or baking, I used Honey or 100% Maple Syrup. More veggies, and nuts to my diet all helped as well.

What did it do??

Let me tell you. I started out last year at 270+ pounds, I wore a size 26 jeans, and couldn't run for a bus. During the course of the last year I dropped to a size 18 jeans, and the last Dr.'s visit I weighted 239 pounds, and I have run for a few buses with no problems.

Somethings that I have noticed, are clearer skin (when I am not cheating!) No gas when I am following a strict Paleo routine. Lastly, I didn't notice it until this morning because well, until the last two weeks, I really haven't touched wheat in a year, I haven't had cramps.

That may not seem like a big deal, but I had a total hysterectomy almost 7 years. Because of my age, 34, he left me one ovary, so I wouldn't be stuck taking hormones at such a young age. I still started taking an over the counter all natural one, two years ago, but stop taking it about 3 or four months ago. I never had any symptoms of irritability, or cramping, or worse that made me want to take them in the first place, That was until today. I attribute it to the fact, I have had wheat and refined sugar in the last two weeks.

People have no idea how much processed food affects our bodies. Mentally, hormonally and physically. I have added vitamins to my dietary regimen too, but I do feel better, and more energy as well.

I can't make anyone follow a Paleo Lifestyle. However after taking a 30 day challenge I don't know how anyone can argue that they don't feel better, healthier, and want to continue to make themselves heal. Yes, you heard me, HEAL. We have done so much damage to our bodies with the crap out there, that Paleo really does help heal us from the insides out.

There are so many free resources, recipes, blogs, cheap phone apps, available to all of us. There is no reason that anyone can fail at being Cave person, or as my friends call me, "Dino-girl". LOL

My new goal, is to focus back to being committed to my health. Committed to Paleo. Looking at what I am putting in my body, not just blindly doing it. I want to start to exercise this year.. THERE I SAID IT... I will start to move my body. I won't know what I can really do, or burn, until I make it work. So there is my goal for the next step in MY PALEO Journey. I would always do better with company on my journey. Your path may lead somewhere different than mine, but the journey is always more fun together. Who wants to join me???

Staying Motivated, Never know who you will inspire!

Hi Guys,

Life gets super busy sometimes, with all the things that I do, and ways that I split things up, I don't get here often enough. I apologize.

Recently I went on working sta-cation, and after having "mostly" followed the Paleo Lifestyle, I apparently stunned many people. Friends I hadn't seen, wondered where the rest of me had gone. They thought I looked amazing.

In my mind, I haven't done much, gone down a few clothes sizes, and I still have so many healthy eating habits to incorporate, I feel I have much to do still. So in my mind, I am not a "Good Pale-ian" (is that a word? If Not I just made it up and it is now).

I started down this path, in February of this year (2012) not to lose weight, but to get healthier. To hopefully get to a place where I may have enough minerals, vitamins, and healing going on in my body, to decrease the medicine I have to take. I am a diagnosed Bi-Polar w/severe Depression, & Borderline Personality Disorder. Um yeah that's a whole lot of crazy for a girl who used to be an out going, fun loving child. So what happened?

Diet, and hormones happened.

I can't do much about my hormones, but I can affect my diet. Which does help change SOME of my hormonal, and chemical changes. So those are the reasons for me to chose the healthy, organic, way of the Paleo Lifestyle. The immediate benefits just happened to be weight loss for me. Hmmm are those changes that I am going to reject? Yeah right!!

Any who,  I am so pleased to say that one of the things that I have tried to do, is "Paleo it Forward". I believe so much in this lifestyle, I want others to believe in their own health and wellness, to at least try it for 30 days.   It's a difficult commitment to make at first. I know, remember I was in your shoes once. However, I am research hound, and went straight to Google, to find out my alternatives off the bat, before I made any decisions. Happily I found them over time, and built up all the resources that are here in my blog. I am always available for questions as well.

Apparently I have inspired someone to try this lifestyle. She is someone I have admired for many years, and I am honored that she will be working to improve her own health and well being. That I could be that catalyst for her, like she has been for me for so many other things in my life.

I believe that one of the two best articles I ever read was written by Paleo On A Budget, explaining how we can only do what our budget allows us to do. BUT we do the best we can within that budget. The other I will find you when I am home on my own computer. It basically said that money shouldn't over ride the desire to for us to change our habits. We can always alter the Paleo Lifestyle to what we need. I am GREAT with not eating cheese/dairy, it isn't healthy for us, but if after your 30 day challenge you truly want to incorporate an ORGANIC version back in, by all means, find a RAW, Unpasteurized form of cheese, and organic milk as well as butter (Kerry Gold is the best butter I have heard about) to use in your Paleo diet. I basically stick with Almond milk for my Coffee or cooking needs. I also use Turbino sugar, rather than the chemical versions of sweetener. I also still have my honey too.

You just find what will suit your tastes, and budget the best. I usually have a freezer filled with frozen veggies, and meats. I buy on sale, and that way I won't be hungry. Then I can buy fresh fruits, avocados, and keep my almond butter, almond meal, stocked up as I need it.

My two favorite things from Trader Joe's is their Coconut Oil, taste and cost, you can't beat. I have tried about 10 different types of Coconut Oil, but they are my favorite so far. The other is their Almond Meal. I used to grind my own from fresh almonds, but it was more like granulated almonds. The baked goods, and pancakes I can make with Trader Joe's Almond Meal are to DIE FOR!!

Whole Food Market will soon be carrying a line of Paleo Breads, from Julian Bread Company. For now it is only available on-line.

Homemade Laundry Detergent

If you are scent or chemical sensitive when it comes to your laundry, this is a MUST try!!! Our boys had excema and we had to make our laundry soap at home. It sure saved us money.

Helping Out & Falling OFF

A friend too me on a quick trip to Whole Foods Market after work the other day, just to see what I could afford there, that was Paleo. Mind you I have a very limited budget. Organic isn't in my daily budget, it usually never even gets to happen once a month, but it's nice to go taste test once in a while. LOL

We strolled all around the store. Beautiful, let me tell you. This place is lovely. We got to inform a lady from Canada who was ill, and just diagnosed with Celiac disease, all about where to look for information about Paleo Diet Lifestyle.

Of course I gave her my two favorite sites, Paleo On A Budget &  with her particular infliction, Elana's Pantry. What a great feeling to help in a way that no one at Whole Foods Market could do. She left that store with not many purchases, but with the means to make herself healthy.

As I confided in her. "Paleo is a way to make your body healthy, to turn back the damage we have done to it. I am Bi-Polar, I am doing this to help even out my moods, to help the chemical imbalances of my body. One of the 'Side Effects' of following Paleo, and getting healthy, has been some weight loss, but that hasn't been my goal."

I spent half my budget in there on odds n ends, but I was in the right place to help that lady. I think that was worth it.

Now if you have been to a Whole Foods Market lately, you know they have Hot Tables, and Fresh Salads/Fresh Fruit Bars... OMG Priced per LB. It all looked and SMELLED so good. Some was Paleo, some Not so much. I had to get out of there before I made all kinds of bad choices, and over spent.

So we left, I had my friend drop by Chipotle Mexican food for me, because I was so hungry, and I still had nothing to make for dinner.  MISTAKE!!!

I paid for that all the next day. I found out just how bad Rice and Corn Chips are for you after 30+ days of Paleo.

I wonder if this means I should give away my rice cooker like Robb Wolf did? LMAO

I Paleo'd up all day yesterday, Lots of Coconut Oil in my cooking, Red Meat last night for dinner, which I have been CRAVING for over a week now. I feel great today.

Easily fixed. As Megan told me, don't beat yourself up, just dust yourself off, and get back on the wagon. Have I said how much I love that girl?? She keeps me motivated even from thousands of miles away!!

Off for my second cup of Coffee. Maybe I will do some rearranging of furniture today?? Day is still early...

Random Thoughts

There as so many blogs, recipes, resources, & people out there on the internet doing or have been doing Paleo, it blows me away. The more I research stuff to find something new, or different FOR ME, I find that is old hat to others.

My great friend, Megan, who turned me on to Paleo in the first place, posted an article on Facebook that I decided to read. I am so glad I did.

Not only was I relieved of my GUILT for not following a Grass-fed Cow diet (Butter & Beef). I found another amazing resource for my LIFESTYLE!!!

Paleo On A Budget  is added to my list of blogs now. She has a great list of menu plans for people who want to get healthy yet may not be able to always be able to buy Top-Shelf items.

I find it difficult sometimes for me to understand all the ins and outs of Paleo etiquette, like some people eat dairy, even though its a no no. Others don't eat fruit even though it's allowed. That I sort of understand, since there is natural occurring sugar, and watching sugars is important. For me leaving so early in the morning though, to catch a bus, I grab a banana and my coffee, and I am out the door. Having packed my Paleo lunch from the leftovers the night before. I then make a protein filled breakfast at work when I get there two hrs later, just before I clock in.

I waiver at times. I had to text Megan the other day, to keep me on track. I wanted Donuts and Sour Dough bread so badly. But she helped me stay with it. I did buy donuts, tricked my brain. LOL Gave em to my Management team at work. Let my mind think I was getting something I wanted, but never ate it.


Need to go check on my Roast and Carrot fries.
